Tagalong Stuffed Pudding Cookies

As I mentioned the other day, Tagalongs are one of my favorite Girl Scout cookies.  One of my favorite types of cookies that I make are pudding cookies.  I love them because the pudding makes the cookies so moist.  I decided to combine two of my favorite cookies, Tagalongs and pudding cookies.
Have you ever seen the blog Picky Palate?  If not, you need to check out Jenny’s great blog.  She came up with a great idea for Oreo Stuffed Chocolate Chip Cookies.  I decided to use her great cookies for inspiration, but instead of chocolate chip cookies I stuffed Tagalongs in Peanut Butter Chocolate Chip Pudding Cookies.   These pudding cookies would have tasted fantastic on their own, but they tasted even better with a Tagalong stuffed inside.
So I wouldn’t be tempted at home (I would have eaten all of them), I sent most of the cookies to work with my husband.  These cookies were literally the talk of the school. My husband told me that many of the teachers said that it was the best cookie they have ever had.  He also told me they were devoured at lunch and were still discussed during the faculty meeting the next day.
Seriously these cookies are so good! If you are a fan of Tagalongs, this just takes them to the next level. If you don’t have Tagalongs, just stuff the pudding cookies with any round chocolate peanut butter cookie, like Chocolate Peanut Butter Oreos.  These cookies are a big hit and so delicious with a great peanut butter and chocolate flavor! Enjoy!

Tagalong Stuffed Pudding Cookies

  • 3/4 cup butter, softened
  • 1/2 cup peanut butter
  • 1/4 cup sugar
  • 3/4 cup brown sugar
  • 1 box (3.4 ounces) instant vanilla pudding, dry
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 2 1/4 cups flour
  • 1/2 cup mini chocolate chips
  • 2 boxes of Tagalongs (or use one box and make the rest plain)

  1. Preheat the oven to 350 degrees.
  2. In a large bowl, cream the butter, peanut butter, sugar, and brown sugar together. Add the vanilla pudding mix and beat until incorporated.
  3. Beat in the eggs and vanilla until combined.
  4. In a small bowl combine the flour and baking soda. Slowly add this mixture to the wet ingredients until all ingredients are well incorporated.
  5. Stir in the mini chocolate chips until they are all mixed into the dough.
  6. Lay Tagalongs upside down on an ungreased cookie sheet. Roll the dough into small rounded teaspoonfuls and place a ball of dough on top of each Tagalong. Flip the Tagalongs over and place another ball of dough on top of the Tagalong. Press both balls of dough together around the Tagalong and seal the dough together, enclosing the Tagalong. Round the dough into a circle shape around the enclosed Tagalong. (I put less cookies on each cookie sheet as they were bigger in size than a normal cookie dough ball)
  7. Bake for 9-11 minutes or until the cookies are golden brown.

Makes about 30 cookies
