Overnight Strawberries and Cream French Toast

I cannot believe that Easter is coming up in less than two weeks.  As I look out my window now, I see about 3 inches of snow.  While, I know there is some snow in March, once the middle of March comes I usually am getting really anxious for spring and want nothing to do with snow.
Today we got about 3 inches of snow.  It is not like I live in the coldest place, I live in Pennsylvania.  I want spring to be here already.  Spring is one of my favorite seasons, I love to see all the flowers bloom.  I also love all the fresh fruits and other great things of spring and summer.  Easter is a great spring holiday with all the great flowers and pastel colors.
This Overnight Strawberries and Cream French Toast is a great breakfast for Easter morning.  This is great because you can make it the night before and then pop it in the oven when you are ready for breakfast.  That is great for any morning, but especially on a holiday like Easter when you don’t necessarily have time to make breakfast.
This has fresh strawberries and a great strawberry flavor.  I got this great idea from a fabulous Overnight Peaches and Cream French Toast from Chef In Training.  This French Toast was so delicious.  The French Toast was combined with strawberries and cream cheese to give it a great flavor.  This would make a great breakfast for Easter or for any morning where you want to make a special breakfast!

Overnight Strawberries and Cream French Toast

Overnight Strawberries and Cream French Toast


  • 1 cup brown sugar, packed
  • 1/2 cup butter, cubed
  • 2 tablespoons light corn syrup
  • 1 1/2 pounds strawberries, quartered
  • 1 loaf Challah bread, cubed (you can also use another type of bread such as Texas Toast)
  • 1 package (8 ounces) cream cheese, cut into small cubes
  • 12 eggs
  • 1 1/2 cups heavy cream
  • 1 teaspoon vanilla


  1. Combine the brown sugar, butter, and corn syrup in a small saucepan. Cook and stir over medium heat until the sugar is dissolved. Pour the sugar mixture into a greased 9x13 pan.
  2. Place half of the strawberries on top of the sugar mixture. Then layer half of the bread cubes and cream cheese over the strawberries. Then layer again with the other half of the strawberries, then the other half of the cream cheese, and then the other half of the bread.
  3. Whisk the eggs, heavy cream, and vanilla together in a medium sized bowl. Pour the egg mixture on top of the bread. Cover the dish and refrigerate overnight.
  4. The next morning remove the dish from the refrigerator 30 minutes before cooking. Preheat the oven to 350 degrees. Bake the dish for 50-60 minutes or until a knife inserted in the center comes out clean.
