Chicken Macaroni and Cheese

I always like finding new macaroni and cheese recipes.  I also like mac and cheese recipes that are easy so that we can have a great homemade meal that tastes better than the mac and cheese in the box.  Macaroni and cheese is a great comfort food that I remember from my childhood.   I really liked that this version added chicken to the mac and cheese.
This Chicken Macaroni and Cheese tasted great.  I really like the chicken with the cheesy shells.  I also like that this macaroni and cheese is great for a delicious weeknight meal.  I really loved the chicken flavor added to the great flavor of the macaroni and cheese.  I hope that you try this great variation of macaroni and cheese.

Chicken Macaroni and Cheese

Chicken Macaroni and Cheese

  • 16 ounces shell macaroni
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 can (10.5 ounces) chicken broth
  • Dash of pepper
  • 2 tablespoons flour
  • 1 package (8 ounces) Velveeta Cheese, cubed
  • 1 cup pre-cooked or leftover chicken, cubed
  • Panko or bread crumbs (optional)

  1. Preheat the oven to 350 degrees.
  2. Boil the macaroni in a large pot for 9-11 minutes or until al dente. Drain the macaroni and set aside.
  3. Meanwhile, pour the cream of chicken soup, chicken broth, pepper, and flour into a large saucepan. Cook over medium heat until boiling. When it begins to boil, add in the Velveeta and continue to boil until the Velveeta is completely melted, stirring occasionally. Then add in the chicken and stir and cook for 2 minutes.
  4. Add the sauce into the macaroni and mix well to combine. Place the macaroni into a greased casserole dish. Sprinkle the Panko or bread crumbs on top if desired. Bake for 20 minutes.
