Carrot Cake Muddy Buddies

Carrot Cake Muddy Buddies are a great and easy snack that is made with carrot cake mix.
I love making different flavors of Muddy Buddies, because they are such a great and easy snack to make.  I love trying to come up with new varieties of this great snack.  I decided I should make a version of Muddy Buddies or Puppy Chow for Easter.  Usually I associate some food flavor with each holiday, but I had trouble thinking of one for Easter.  All I could think of was pastel colored food.
All of a sudden I thought of carrots, due to the association with the Easter bunny.  When I think of carrots I think of carrot cake.  I remember the first time I tried carrot cake I was in high school.  One of my co-workers at my after school job supposedly made the best carrot cake.  I was so unsure because carrots did not seem like they belong in a dessert.  I decided to try it and it was so delicious. I have loved carrot cake ever since.
Since carrot cake always has great flavor I decided to make Carrot Cake Muddy Buddies.  These Muddy Buddies tasted delicious and tasted just like carrot cake.  I added chopped walnuts into the muddy buddy mix to add to the great carrot cake flavor.  This is such a great and easy treat that would be great for Easter or anytime. I  hope that you enjoy!

Carrot Cake Muddy Buddies

Ingredients

  • 5 cups rice Chex cereal
  • 1 1/2 cups white chocolate chips, melted
  • 1 1/2 cups carrot cake mix
  • 1/2 cup powdered sugar
  • 1/2 -1 cup walnuts, chopped (optional)

Instructions

  1. Add the powdered sugar and the carrot cake mix into a plastic bag and shake to combine.
  2. Put the Chex cereal and chopped walnuts in a large bowl and combine.
  3. Melt the white chocolate chips in the microwave for 45 seconds and stir until smooth. If not melted, microwave for additional 10 second increments until melted and smooth.
  4. Pour the melted white chocolate over the Chex cereal and walnuts and mix until the cereal and walnuts are coated. Add the cereal mixture to the plastic bag with the powdered sugar and carrot cake mixture and shake until the cereal and walnuts are completely covered.
