Individual Samoas Cheesecakes

It is that time of the year, the time for Girl Scout cookies!  When I was young and in Girl Scouts I always used to look forward to selling the cookies and then delivering then. The best part was of course eating them.
I don’t know anyone in Girl Scouts so I was really excited when I realize that the Girl Scout website has a list of where the cookies will be sold.  I have good memories of selling cookies in the small local mall with my friends from Girl Scout, we always had a lot of fun!
Samoas are one of my favorite Girl Scout cookies.  I decided to make individual cheesecakes with the Samoas.  These cheesecakes are fantastic and I love that they are in individual servings.   Each cheesecake has a Samoas cookie at the bottom.  On top of each cookie is cheesecake and then chocolate and caramel are drizzled on top of the cheesecake.
These were so delicious and I love how there is cheesecake and Samoas cookies in each bite.  The Samoas and the cheesecake were a really great combination.  The good thing is that you can make these with the store bought cookies that are similar to Samoas.  I hope you enjoy these delicious cheesecakes!

Individual Samoas Cheesecakes


  • Samoas Cookies (or a similar store bought cookie)
  • 8 ounces cream cheese, softened
  • 1/4 cup sugar
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1/8 cup milk chocolate chips, melted (optional)
  • Caramel ice cream topping (optional)


  1. Preheat the oven to 325 degrees.
  2. Line a muffin tin with liners and place a Samoas cookie at the bottom of each muffin tin.
  3. In a large bowl, beat the cream cheese and sugar until smooth. Stir in the egg and vanilla until combined.
  4. Evenly spoon the batter over the Samoas.
  5. Bake the cheesecakes for 15 minutes or until they are set.
  6. When done cool and refrigerate until ready to serve. Top with the melted milk chocolate chips and the caramel ice cream topping.


This makes about 9 individual sized cheesecakes
