Now that the holidays are over I really need to lose some of the holiday weight. I ate so much over the holidays and I am sure I gained a few pounds. I don’t really know, because I’m a little afraid to weight myself. I usually try to eat somewhat healthy, of course I indulge in desserts, but I make sure to do so with moderation.
With diet, some little changes can make a big difference. I almost always use whole wheat bread and whole wheat pasta. Also, another substitution that is healthier is using ground turkey instead of ground beef. I made these changes to this Spaghetti and Meatballs to make it healthier. The spaghetti was really good and hearty and 2-3 meatballs was enough to fill me. This is a great hearty meal that doesn’t taste like it is made using healthy ingredients.
Skinner Spaghetti and Meatballs
(Recipe adapted from Food.com).
1 lb ground turkey
1/2 cup breadcrumbs
1/4 cup Egg Beaters
1 teaspoon garlic powder
1 teaspoon Italian Seasoning
8 ounces whole wheat angel hair pasta
1 cup pasta sauce
1/4 teaspoon parsley
1. Preheat the oven to 400 degrees.
2. In a large bowl combine the ground turkey, bread crumbs, egg beaters, garlic powder, and Italian Seasoning.
3. Separate the turkey mixture into about 20 individual meatballs and place the meatballs on a greased 13×9 cookie sheet. Bake for 10 minutes, turn the meatballs, then bake for an additional 5 minutes or until the meatballs are browned on both sides.
4. Meanwhile, heat the pasta sauce in a sauce pan over low heat and cook the angel hair pasta in boiling water for about 4 minutes or until tender. Either serve the pasta, meatballs, and sauce combined or leave separate so that you can portion out your serving. Sprinkle the parsley on top of the pasta.
