Chocolate Covered Cherry Truffles

Wow, the holidays are quickly approaching.  Has everyone been baking a lot?  I made cookies for a blogger cookie swap two weekends ago and this weekend I will be baking some cookies for a cookie exchange.  Then I have to make goodies for Christmas parties and Christmas gifts.  Even though it is busy I love this time of year. 
I love easy and sweet treats to give as Christmas gifts.  These truffles replicate one of my favorite Christmas candies, Chocolate Covered Cherries.  I think they are even better than the Chocolate Covered Cherries.  I love the Oreo truffle with the cherry in the center and covered in chocolate, yum! These are also so easy to make! I hope that you make these soon!
Chocolate Covered Cherry Truffles
(Recipe adapted from Kraft.com)
1 package (8 ounces) cream cheese, softened
1 package Oreos, crushed
Maraschino cherries, patted dry
2 cups semi-sweet chocolate chips, melted
1/4 cup Red Candy Melts, melted

1.  Mix the cream cheese and Oreo cookie crumbs until well blended (To crush the Oreos put them in a Ziploc bag and hit them with a rolling pin or use a food processor)

2.  Shape the Oreo mixture into balls and then press to flatten.  Put a maraschino cherry on top and wrap the Oreo mixture around each cherry to completely enclose the cherry. Repeat with the rest of the Oreo mixture.    Freeze for 10 minutes.  


3.  Dip the Oreo balls into the melted chocolate and then place onto a cookie sheet lined with wax paper.  Drizzle the melted red chocolate on top.   (Melt the chocolate by microwaving for 45 seconds, stirring, then microwaving for 10-15 second intervals until completely melted). 

4.  Refrigerate for one hour or until firm.
