Honey Chicken, Pineapple, and Zucchini Kabobs

Take a look at the address bar, do you notice anything different?  What’s Cooking, Love officially got its own domain.  Now What’s Cooking, Love? can be found at www.whatscookinglove.com.  Don’t worry, if you still go to whatscookinglove.com, it will still connect you this site.  I’m pretty excited about it!
Back to the recipe! These kabobs were so delicious.  A few weeks ago my mom had surgery on her hand and couldn’t cook for about two weeks.  One night we went over to my parents and cooked them dinner.  We decided to grill and made these kabobs.  They were great!!
Everyone especially loved the grilled pineapple, it was so sweet, and I definitely recommend trying it.  I also really liked the honey marinade on the chicken.  We all loved these kabobs and I can’t wait to make them again!

Honey Chicken, Pineapple, and Zucchini Kabobs
(Recipe adapted from A Hint of Honey)
Honey Marinade

1/4 cup canola oil
1/3 cup honey
1/3 cup soy sauce
2 cloves garlic, minced
4 boneless chicken breasts, cubed
1.  In a large bowl whisk together all the ingredients.  Reserve a small amount of the marinade to brush over the chicken when cooking.  Then add the chicken and marinade in the refrigerator for at least 2 hours.
Kabobs
1 pineapple, cubed
2 zucchinis, cubed
1.  Brush the zucchini cubes with canola oil and salt.
2.  Preaheat the grill for high heat.
3.  Put the chicken, pineapple, and zucchini on the kabobs.  Place foil on the grill, and place the kabobs on top. While cooking, brush the reserved marinade on top of the chicken.  Grill for 12-15 minutes or until the chicken is done and the zucchini is tender.

  7. Hello.
    Visiting from Kathe’s blog hop.

I love grilled pineapple. These are very similar to the ones my wife likes to make. She’ll use red pepper, pineapple, chicken, zucchini & either red or yellow onions. She makes them in the oven or uses her counter-top grill. Either way, they are very tasty. Thanks for sharing.
