Strawberries and Cream Cinnamon French Toast Bake

For some reason when I think of Mother’s Day, I think of brunch.  We usually do something with one of our mothers and either do dinner or brunch.  Last year my mom, sister, and I went out together and got manicures and pedicures and went out to lunch, which was really nice.  I am really excited about Mother’s Day this year because it is my first Mother’s Day as a mother!  I think it is a great idea to make your mother breakfast or brunch for Mother’s Day.  
This French Toast Bake is perfect for Mother’s Day breakfast or brunch. I really like this variation on the Cinnamon French Toast Bake and the Banana Walnut Cinnamon French Toast Bake.  This is made with refrigerated cinnamon rolls and tastes delicious.  I really love these Cinnamon French Toast Bakes.  The combination of strawberries and white chocolate chips with the cinnamon roll french toast is fantastic.  I think your mother would definitely love this if you made it for her for Mother’s Day, I know it would make my day!

Strawberries and Cream Cinnamon French Toast Bake

3 eggs
1 cup strawberries, mashed
1 can refrigerated cinnamon buns with icing
1/4 cup heavy whipping cream
1 teaspoon cinnamon
1 teaspoon vanilla
3/4 cup white chocolate chips

1.  Preheat the oven to 375 degrees.


2.    Separate the refrigerated cinnamon rolls into 8 rolls, setting the icing aside.  Cut each roll into 8 equal pie-shaped wedges.  Place the cinnamon roll pieces into a greased 8×8 baking dish.  

3.  In a medium bowl beat the eggs.  Then beat in the strawberries, heavy whipping cream, cinnamon, and vanilla until they are well blended. Stir in the white chocolate chips.  Then gently pour the mixture over the cinnamon bun pieces. 


4. Bake for 20 to 28 minutes or until golden brown.  Cool for 15 minutes.

5.  Microwave the icing on medium (50%) for 10-15 seconds or until it is thin enough to drizzle.  Drizzle the icing over the top of the French Toast Bake.

    I just made this and everything went fine..until I pulled it out of the oven….. It’s really runny– it’s almost like there’s too much egg in it. Ended up throwing the whole thing away as none of it could be saved. :(

    • I’m sorry. Mine wasn’t runny at all so I’m not sure. You could try putting less egg in it. It might have needed to cook for longer.
