Mint Chocolate Chip Kisses

I’ve been on a cookie making spree lately.  I love cookies and I love when I can use store bought ingredients, like cookie mix, and add ingredients to make my own semi-homemade spin.  If you rather make cookies from scratch, you can always use the add-ons with your favorite recipe.  I have another semi-homemade cookie recipe for you later this week.  
These cookies were really good.  The mint flavor really balanced well with the chocolate chip cookies and the Hershey kiss.  These are perfect for St. Patrick’s Day and could be called “Kiss me I’m Irish cookies.”  They are also good for anytime of year and a perfect easy treat.  Enjoy!!

  *  Irish Coffee Chocolate Chip Cookies
Mint Chocolate Chip Kisses

1 pouch Chocolate Chip Cookie mix
1/2 cup butter (1 stick), softened
1 egg
1/3 cup Andes Creme de Menthe Baking Chips (or chopped up Andes)
9 drops green food coloring
Hershey Kisses

1.  Preheat the oven to 350 degrees.

2.  Stir the chocolate chip cookie mix, butter, and egg together in a large bowl until soft dough forms. Then add in the Andes Creme de Menthe Baking Chips and food coloring and stir to combine.  

3.  Roll the dough into rounded teaspoonfuls and place on an ungreased cookie sheet.  Bake for 8-10 minutes.  Cool the cookies for 5 minutes, then gently press a Hershey Kiss into the center of each cookie. Cool for an additional 5 minutes then gently remove from the cookie sheet onto a cooling rack.

  4. It is so easy to make cookies from scratch that I’d never use a cookie mix. The mix comes with preservatives and other ingredients I don’t want in my cookies. For your recipe I’d just use my regular chocolate chip cookie recipe, but add in the Andes’ chips and top with a Kiss.
