Irish Coffee Chocolate Chip Cookies

This week has been a crazy week.  My son was sick for most of this week and for most of last week.  On Wednesday evening we ended up having to take him to the emergency room because his fever had spiked high again.  Luckily after some tests they found out what was wrong and after some antibiotics he is now better! 

I made these cookies last weekend.  I thought it would be great for St. Patrick’s Day to add some Bailey’s or Irish Cream to cookies.  Last minute I decided to add some coffee, because Bailey’s and coffee are great together.  I wasn’t sure how these would turn out, but I was not expecting them to be this AMAZING!!!  
The Bailey’s makes these cookies incredibly moist and they really do taste like coffee and Bailey’s, with the added bonus of chocolate chips!! They are also so easy to make, I have already made them twice and plan on making them tomorrow when we have some friends over.  
I definitely recommended these cookies, they are super moist, easy, and so delicious!!

Irish Coffee Chocolate Chip Cookies


1 pouch Chocolate Chip Cookie mix
1/2 cup butter (1 stick), softened
1 egg
3 tablespoons of Bailey’s Irish Cream (original)
1 teaspoon of instant coffee

1.  Preheat the oven to 350 degrees.

2.  Stir the chocolate chip cookie mix, butter, and egg together in a large bowl until soft dough forms.

3.  In a separate bowl mix the Bailey’s and instant coffee together, the coffee will not completely combine.  Then pour the mixture into the cookie dough and stir until mixed.

4.  Roll the dough into rounded teaspoonfuls and place on an ungreased cookie sheet. (The dough will be moist and sticky, put flour on your hands to help with shaping the cookies).  Bake for 8-10 minutes or until golden brown.  Cool the cookies for 5-10 minute then remove from the cookie sheet onto a cooling rack.  This makes about 18 medium sized cookies.
